The most commonly known type of lime and used in a wide variety of culinary experiences, and can be substituted in all dishes where lemons are required. Sold predominantly green however, becomes juicier on maturing to yellow/green. It is said that lemons change the taste of food, and limes enhance the taste. Hint: for juicing, microwave limes for 15 seconds.

The main harvesting period is January through to August; however some fruit is available 12 months of the year.
